  • 10-13 potatoes
  • drizzle of olive oil
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste

Method

  • Step 1

    Preheat oven to 400°F.

  • Step 2

    Rinse and dry potatoes. Using a pairing knife, make thin slits into the potatoes but no not slice the bottom. Once all potatoes have been cut, toss with olive oil, salt, pepper, and garlic powder.

  • Step 3

    Roast for about 40 minutes or until fork tender.
