Fried Chicken:
ingredients
- 1 pound chicken thighs, fat trimmed
- 1 teaspoon dried parsley
- 1 teaspoon ground mustard
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon cayenne
- 1 teaspoon onion powder
- 1 egg
- 1 cup flour
- pinch of kosher salt
- pinch of ground black pepper
- water, for dredging
- corn oil, for frying
Method
Step 1
Season the chicken and place it in the fridge to marinate for 2 to 4 hours.
Step 2
Add the egg into the chicken and mix. In a large bowl, mix flour, salt, and pepper.
Step 3
Dredge the chicken into the flour, then into a bowl of water, then back into the flour.
Step 4
Fill a large pan halfway with corn oil. Place over medium heat and bring it up to 375 degrees. Once the oil is hot, fry the chicken for 10 minutes on each side. Remove the chicken from the pan and drain over a paper towel.
Brown Butter Hollandaise:
ingredients
- 1/2 cup unsalted butter
- 4 egg yolks
- 1 teaspoon dijon mustard
- 1 tablespoon lemon juice
- a few dashes of hot sauce
Brown Butter Hollandaise:
Step 1
Place the butter in a small pan and melt. Stir the butter and cook until it becomes a light brown color and begins to smell a bit nutty. Immediately blend together the yolks, mustard, and lemon juice. Slowly pour in the hot butter into the blender. Once all is combined, pour the sauce into a medium bowl, and set aside.
Sandwich Additions:
ingredients
- 8 slices of brioche bread, toasted
- 1 cup arugula
- 1 large tomato, sliced `
- 4 fried eggs
- a few dashes of hot sauce
Sandwich Assembly:
Step 1
Spread on the hollandaise sauce onto the bottom piece of bread and top with the fried chicken. Top with arugula, tomato, additional sauce, and a fried egg and serve.
