Chocolate and Olive Oil Ganache

We used Pompeian Organic Extra Virgin Olive Oil to make a rich, chocolate 'ganache' that is perfect drizzled on top of ice cream (or just about anything!). The olive oil gives the chocolate sauce a magic shell type texture while the taste is fruity, spicy and pleasantly bitter. The olive oil brings out the best of the chocolate flavor, while imparting a beautiful glossiness at the same time.   • Step 1

    Add chocolate to a medium sized metal bowl and set it over a pan of simmering water. Stir until totally melted.

  • Step 2

    Carefully remove bowl from the heat and whisk in the olive oil until emulsified and glossy.

  • Step 3

    Let cool slightly, then use to top ice cream, or to glaze a cake.
