Apple 'Nachos' with Chocolate, Peanut Butter, Coconut Milk Caramel, Granola and Coconut Chips

How do like them apples? Hopefully covered in chocolate, peanut butter and homemade caramel!  The perfect fall treat!




4-6 pink pearl apples, sliced into wedges
1/4 cup homemade magic shell 
1/4 cup peanut butter sauce (recipe below)
1/4 cup coconut milk caramel (recipe below)
1/2 cup granola
1/2 cup toasted coconut chips


Arrange apple wedges onto a tray or platter. Drizzle with homemade magic shell, peanut butter sauce, and coconut milk caramel in an even layer. Sprinkle with granola and toasted coconut chips. Serve immediately.


Peanut Butter Sauce


1/4 cup peanut butter
1 tbsp. coconut oil




Combine peanut butter and coconut oil in a small bowl and microwave for 30 seconds. Stir until smooth. 


Coconut Milk Caramel


1 cup full fat coconut milk
1/2 cup coconut sugar
1/4 cup maple syrup
pinch of salt




In a medium saucepan set over medium high heat, combine coconut milk, coconut sugar, and maple syrup. Bring to a boil, then reduce heat and simmer for 15 minutes to thicken. Sprinkle in salt to taste.


Transfer to a jar with a lid and place in the refrigerator for 2 hours. This will allow caramel sauce to thicken even more.
