We made these Turkey BLT Sandwich Skewers to inspire you for back to school! You will love how easy they are to make and your kids will love how fun they are for lunch.

ingredients

  • Herb Pesto:
  • 1/2 cup sunflower seeds
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • 2 cups arugula, packed
  • 1 cup basil
  • 1 cup flat-leaf parsley
  • 1 lime, juiced
  • 1/2 cup olive oil
  • Skewers:
  • 2 slices whole grain bread (or your favorite gluten free bread), quartered
  • 1 pack Roasted Turkey Breast slices
  • 4 strips thick cut bacon, 1 inch pieces
  • 6 cherry tomatoes, halved
  • 3 lettuce leaves, 1 inch pieces
  • 3 wooden skewers

Method

  • Step 1

    To make pesto - add sunflower seeds, garlic and salt to food processor and pulse until ingredients resemble coarse sand. Add arugula, basil, parsley & lime juice and process - slowly stream in the olive oil until pesto becomes smooth and glossy.

  • Step 2

    For bacon - In a heavy bottom fry pan, cook bacon over medium high heat until crisped, turning half way through (about 6-8 minutes), remove from pan and drain on a paper towel lined plate. Set aside.

  • Step 3

    To assemble skewers - spread 1/2 teaspoon pesto on each quarter of bread and begin assembling the skewers. Skewer one quarter bread, pesto side down and slide to the top of the skewer, follow with 1 slice Applegate Naturals Oven Roasted Turkey Breast (Folded into quarters), one tomato half, one lettuce leaf, three pieces of bacon, then one piece lettuce and finish with one quarter bread, pesto side up - repeat ingredients for remainder of skewer plus following skewer.
