ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion
- 1 teaspoon ground cumin
- 1 teaspoon ground cayenne
- 1/4 cup tomato paste
- 1/2 cup Two Good Lowfat Greek Yogurt – Plain
- Kosher salt, as needed
- 1 (3-pound) whole salmon fillet
- Scallions, sliced, for garnish
Method
Step 1
Preheat the oven to 450°F. In a medium skillet, heat the olive oil over medium heat. Add onions and sweat until softened, 8-10 minutes. Add cumin and cayenne, then cook until fragrant, 2 minutes. Stir in tomato paste and cook until lightly caramelized, 3-4 minutes. Remove from the heat and stir in Two Good Lowfat Greek Yogurt – Plain. Season with salt and let cool slightly.
Step 2
Place salmon on a sheet pan and season with salt. Spread the tomato mixture over the salmon in an even layer. Roast until salmon reaches an internal temperature of 145°F, about 15 minutes. Garnish with sliced scallions, then serve.
