Whether you are serving a crowd (Hello, 2021!) or want to make an easy but special breakfast for your immediate family, this recipe is a winner! Soft and buttery St Pierre Brioche Sliders make the perfect base for cheesy, herbaceous soft-scrambled eggs and crispy bacon. The tops are brushed with a little melted butter, then sprinkled with everything bagel seasoning for a nice punch of savory flavor.
The sandwiches are also great when made in advance! You can assemble them the night before, then gently reheat in the morning right before serving. Alternatively, drop a batch off with a friend or loved one for a lovely little holiday surprise while practicing social distancing.

ingredients
- 1 (16.9 ounce package) St Pierre Brioche Sliders, sliced in half crosswise
- 1 (12 ounce package) bacon
- 10 eggs
- 1 cup half and half
- Kosher salt, as needed
- Black pepper, freshly ground, as needed
- 2 tablespoons fresh parsely, chopped
- 1 tablespoon chives, minced
- 1 tablespoon fresh tarragon, chopped
- 1 cup sharp cheddar, grated
- 2 tablespoons butter, divided
- 2 teaspoons Everything Bagel Spice
Method
Step 1
Preheat the oven to 400˚F. Line a rimmed baking sheet with tin foil and place a baking rack on top. Place the bacon on the rack and bake for about 20 minutes, flipping halfway through, until crisp. Place on a paper towel lined plate to drain. Reduce oven temperature to 375˚F.
Step 2
Meanwhile, place the bottom sheet of the St Pierre Brioche Sliders on a foil lined baking sheet. Set aside.
Step 3
Add the eggs, half and half, salt, pepper, parsley, chives, tarragon and cheddar to a large bowl and whisk until well combined.
Step 4
Add 1 tablespoon of butter to a large nonstick skillet. Place over medium-low heat. Once melted, add egg mixture and reduce heat to low. Cook, stirring constantly but gently, until the eggs are cooked through. Spread the cooked eggs onto the bottom half of the St Pierre Brioche Sliders, then top each sandwich with a small piece or two of cooked bacon.
Step 5
Add top half of St Pierre Brioche Sliders on top. Melt remaining tablespoon of butter, then brush all over the sliders. Sprinkle with Everything Bagel Spice and cook for 5 minutes, or until the tops are golden brown.
Step 6
Make ahead option: If desired, you can assemble the sandwiches the day ahead. When ready to serve, let chilled sandwiches sit at room temperature for about 30 minutes, then place in a 375˚F oven for about 10 minutes, or until heated through.
