- 12 Original Sweet PotaTOASTS, cooked according to package
- 1 (16 ounce) can refried beans, warmed through
- 1 cup shredded rotisserie chicken
- 1 cup shredded iceberg lettuce
- 1 cup shredded red cabbage
- 1 cup shredded Monterey Jack cheese
- 2 red radishes, sliced
- 1 avocado, diced
- 1 tomato, diced
- 1/ 2 jalapeño, minced
- Cilantro leaves, for garnish
- Lime wedges, for garnish
Arrange Sweet PotaTOASTS on a platter and spread refried beans on each. Top with shredded chicken, iceberg lettuce, shredded purple cabbage, cheese, radish, avocado, tomato and jalapeño. Garnish with cilantro and lime wedges, then serve.
