2020 has been rough, there is certainly no way around that, BUT we are heading into THE BEST food season of all, fall flavors! We have Thanksgiving to look forward to, cozy soups to simmer, and ALL THE PUMPKIN THINGS!  If I had to choose one dessert that epitomizes fall baking, it would hands down be pumpkin pie. The color, flavor, and aroma are so nostalgic and comforting. Now, what if I said you could enjoy all of that in your bowl of morning yogurt? Yup! Ellenos, a hand-crafted Greek yogurt company located in the Pacific Northwest, has released a limited-edition Pumpkin Pie Yogurt. It’s made using a traditional family recipe in small batches, using simple ingredients you are familiar with. This Pumpkin Pie edition starts with a base of creamy pumpkin pie filling that is spiced to perfection and is topped with decadent Greek yogurt made from just milk, culture, honey, and sugar. Each cup of this limited edition Pumpkin Pie Greek Yogurt comes with a container of Pumpkin Cookie Crumble, which I’m pretty sure I could eat on its own.

Now, to be honest, there is no reason you need to bake a cake to experience the joy of this yogurt, everything you need for a delicious pumpkin experience comes in the container, but the amazing flavor and texture inspired me to develop a VERY simple snack cake recipe. This comes together in record speed, and could not be easier to make. There is Ellenos Pumpkin Pie Greek Yogurt in the batter, and the baked snack cake is finished with a generous swoosh of creamy yogurt as ‘frosting’ before being sprinkled with the delicious cookie crumble topping.  A cake for all of your pumpkin snacking needs!

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin spice
  • 4 eggs
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 1/2 cup pumpkin puree
  • 1 (7 ounce) container Ellenos Limited Edition Pumpkin Pie Real Greek Yogurt, granola topping reserved
  • 2 teaspoons vanilla extract
  • Butter, or nonstick spray for the pan

Method

  • Step 1

    Preheat oven to 350˚F and butter or spray a 9 by 13 inch baking dish.

  • Step 2

    In a large bowl, sift together flour, baking powder, salt, baking soda and pumpkin spice. In a separate medium bowl, whisk together eggs, brown sugar, vegetable oil, pumpkin puree, Ellenos Limited Edition Pumpkin Pie Real Greek Yogurt and vanilla until well blended.

  • Step 3

    Add the wet ingredients to the dry ingredients and whisk together until smooth. Switching to a rubber spatula, fold any remaining steaks of flour into the batter.

  • Step 4

    Scrape the batter into the prepared pan and bake for about 35 minutes, or until a cake tester inserted in the center of the cake comes out clean.

  • Step 5

    Let cake cool for about 15 minutes, then invert onto a wire cooling rack. Once cool to the touch, top the cake with Ellenos Limited Edition Pumpkin Pie Real Greek Yogurt, and sprinkle the top with the two reserved containers of granola topping.

  • Step 6

    Store any leftover cake in the refrigerator, tightly wrapped, for 3 days.
