Napa Cabbage, Pork and Shiitake Dumplings with Spicy Soy Dipping Sauce

On last week's episode of Bravo Top Chef, Chef Edward Lee Lee was impressed by Kelsey Barnard Clark's "Kentucky Proud" Dumplings! Celebrate the start of the Lunar New Year w/ dumplings of your own! All it takes is a little practice pleating. The potstickers are filled with napa cabbage, pork, ginger, garlic and mushrooms (aka umami heaven!). Serve them along side this spicy sauce and takeout will be a thing of the past!

For The Dumplings

ingredients

  • 1/2 small Napa cabbage, shredded
  • 1 tablespoon kosher salt
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 1/4 cup water
  • 1/2 pound ground pork
  • 2 tablespoons sesame oil
  • 1/2 tablespoon soy sauce
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 cups sliced shiitake mushrooms
  • 20 dumpling wrappers
  • 1 egg, beaten
  • flour, as needed, for dusting
  • 1 tablespoon canola oil

For The Dumplings

Method

  • Step 1

    In a large glass bowl, toss cabbage with 1 tablespoon salt. Let sit for 10 minutes, then squeeze out excess moisture and pat dry. Mix ginger, garlic and water together in small bowl.

  • Step 2

    In a large bowl, mix pork, sesame oil, soy sauce, salt & white pepper together. Add water, garlic and ginger mix and stir again. Finally, add mushrooms and cabbage and mix to combine.

  • Step 3

    Working with one dumpling wrapper at a time, brush edges with egg and add 1 tablespoon of the vegetable filling to the center of the dumpling. Fold the wrapper in half and pleat edges until tightly sealed.

  • Step 4

    To pan-fry the dumplings, heat a large skillet over medium-high heat, add oil once hot. Add dumplings and cook for 2 to 3 minutes until the bottom is slightly browned. Add 1/2 cup water, cover, and let dumplings steam for about 3 mins. Remove lid and cook until water is evaporated.

For The Dipping Sauce

ingredients

  • 1 tablespoon soy sauce
  • 1 tablespoon chili oil
  • 1/2 tablespoon peppercorn oil
  • 1/2 tablespoon Zhenjiang vinegar (or balsamic)
  • 1/2 ground ginger

    Combine all ingredients in a small bowl and serve with warm dumplings.
