This salad is loaded with sweet fruit, like watermelon, cantaloupe, and cherries—just like a fruit salad—but when you add some salty prosciutto and feta, the sweet and savory flavors are perfectly balanced.

ingredients

  • 1 cup arugula
  • 1/4 cup watermelon, chopped
  • 1/4 cup honeydew, chopped
  • 1/4 cup cantaloupe, chopped
  • 5 large cherries, pitted and torn (We used Super fresh Growers Two-Bite Cherries)
  • 1 thin slice prosciutto
  • 1/4 cup cucumber, quartered and sliced
  • 2 tablespoons feta cheese, crumbled
  • 2 tablespoons fresh mint, chopped
  • 1 scallion, chopped
  • 1/4 avocado
  • 1 1/2 tablespoons extra-virgin olive oil
  • juice of half a lemon
  • 1 teaspoon honey
  • salt and pepper, to taste

Method

  • Step 1

    In a large bowl, combine arugula, watermelon, cantaloupe, honeydew, cherries, prosciutto, feta, mint, scallions, and avocado.

  • Step 2

    In a separate small bowl, mix together EVOO, lemon juice, honey, salt & pepper. Dress salad, toss, and serve immediately.
