Matzah Avocado Toast with a Fried Egg

With Passover here, I’m cracking out the matzah and doing what any good millennial would: covering it with an entire avocado. So excited that the #MatzahChallenge is back!!   • Step 1

    In a small bowl, mash half the avocado with lemon juice, salt and pepper. Slice the other avocado half thinly and fan into a rose. Set both aside.

  • Step 2

    In a small nonstick skillet, heat olive oil over medium high heat. Add egg and fry, basting whites until set, 2-3 minutes. Season with salt and pepper.

  • Step 3

    On the matzah, spread the mashed avocado in an even layer. Top with fried egg, avocado rose, pickled onions, mint leaves and aleppo pepper, then serve.
