Matzah Avocado Toast with a Fried Egg

With Passover here, I’m cracking out the matzah and doing what any good millennial would: covering it with an entire avocado. So excited that the #MatzahChallenge is back!! ingredients
- 1 avocado, halved, pitted and peeled
- 1 tablespoon lemon juice
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- 1 Handsome Brook Farm Pasture Raised Organic Egg
- 1 sheet gluten-free matzah
- Pickled Onions, for garnish
- Mint leaves, for garnish
- Aleppo pepper, for garnish
Method
Step 1
In a small bowl, mash half the avocado with lemon juice, salt and pepper. Slice the other avocado half thinly and fan into a rose. Set both aside.
Step 2
In a small nonstick skillet, heat olive oil over medium high heat. Add egg and fry, basting whites until set, 2-3 minutes. Season with salt and pepper.
Step 3
On the matzah, spread the mashed avocado in an even layer. Top with fried egg, avocado rose, pickled onions, mint leaves and aleppo pepper, then serve.
