Grilled Watermelon and Peach Margarita

Did you think you could use a grill to make a cocktail? We used a Traeger grill to make this summer-inspired margarita with an unexpected twist. The grilled watermelon and peaches pick up a slight smoky flavor, giving you just another reason to use your grill this summer.

For the Puree
ingredients
- 4 peaches, grilled
- 1/2 watermelon, grilled
- 1/2 jalapeño, grilled
- 2 lemons, juiced
- 1 teaspoon salt
- 1 tablespoon olive oil, to brush peaches and watermelon
For the Cocktail
ingredients
- 2 ounces lime juice
- 2 ounces tequila, or use mezcal if you like your drinks smoky
- 2 ounces simple syrup
- 2 ounces Watermelon and Peach puree, recipe above
- 3/4 (ounce) triple sec
- Watermelon, sliced for garnish
- Peach, sliced for garnish
- Lime, sliced for garnish
- Mint, for garnish
- Tajin, on a plate
Method
Step 1
Brush fruit and jalapeño lightly with olive oil and place face down on the Traeger grill. Let that grill for about 15 minutes, until the peaches and watermelon are soft with light grill marks. This process will also add a slight smokiness to the fruit.
Step 2
Let it cool for 15 minutes. Add the watermelon, peach and jalapeño to a high speed blender and make a smooth puree. Strain and take out any chunks and set aside.
Step 3
Rim cocktail glass with Tajin spice mix.
Step 4
Add ice, lime juice, peach puree, simple syrup, tequila and triple sec to a cocktail shaker. Shake vigorously for 2 mins, and strain into cocktail glass filled with ice.
Step 5
Garnish with slice watermelon, peaches and jalapeños. Enjoy!
