Chocolate Covered Oatmeal Cookie Ice Cream Sandwiches

We used Bob's Red Mill Organic All Purpose Flour, Organic Rolled Oats & Shredded Coconut to make (IOHO) the BEST Oatmeal Cookies out there. We then sandwiched them w/ creamy vanilla ice cream and dipped them in dark chocolate. They are just what your Memorial Day party needs!
