ingredients
- 3 pounds sweet potatoes, peeled and quartered
- Kosher salt, to taste
- 2 tablespoons chopped chipotle peppers
- 3 tablespoons whipped Honey Butter, recipe below
Method
Step 1
Add potatoes to a large stock pot and cover with cold water by 2 inches. Add salt to taste and bring to a boil. Reduce heat to a simmer and cook for 16-18 minutes or until potatoes are tender.
Step 2
Add chipotle peppers and honey butter and mash until smooth. Season to taste with salt and serve warm.
For the Honey Butter
ingredients
- 1 stick unsalted butter, softened
- 2 tablespoons honey
- pinch salt
To Make the Honey Butter
Step 1
Add softened butter, honey and salt to the bowl of a stand mixer fitted with the whisk attachment and whip until light, fluffy and well combined, about 2 minutes.
