This 'Rosy Cheeks' Cocktail made with Handsome Brook Farm egg whites is sure to make all your guests blush! - 1/ 2 ounce fresh grapefruit juice
- 1/ 4 ounce lemon juice
- soda water, as needed, for topping
- 1 ounce Lillet Rose
- mint meringue, to taste (recipe below)
For the Cocktail
Add grapefruit juice, lemon juice and Lillet to a wine glass. Add ice and top with soda water and mint meringue.
For the Mint Meringue
- 3 Handsome Brook Farm egg whites
- 1/ 2 teaspoon cream of tartar
- 2 drops peppermint extract
- 2 drops lemon juice
Whip egg whites until fluffy.
Once stiff add cream of tartar, mint extract and lemon.
Store in cooler until ready to serve (up to 3 hours ahead).
