ingredients
- 500 grams Barilla spaghetti pasta
- 200 grams diced small pancetta
- 1 1/4 cups grated pecorino romano cheese
- 3 whisked eggs
- pepper to season
Method
Step 1
Add eggs, pecorino and pepper into a bowl, whisk well & set aside.
Step 2
Bring a pot of salted water to the boil, add pasta & cook just under the recommended time.
Step 3
Cook the pancetta in a saucepan over medium heat for 10 minutes until pancetta starts to crisp.
Step 4
Reserve 1 cup of pasta water. Drain pasta & add into the saucepan with the pancetta. Reduce to the lowest heat. Add water, simmer & stir for 1 minute.
Step 5
Turn off heat & stir in the eggs & pecorino and gently mix together. The residue heat will cook the egg and will create a creamy sauce.
Step 6
Serve with extra pecorino.
