Celebrate peak strawberry season with these simple vanilla-roasted strawberries. Serve over your favorite ice cream, yogurt or oatmeal for a springtime dessert or breakfast.
- 1 1/ 2 pounds fresh strawberries
- 1/ 4 cup white sugar
- 1 vanilla bean, split in half lengthwise, seeds scraped
Preheat oven to 350°F.
Remove the stems of the strawberries and rinse well. Slice strawberries and add to a baking tray. Add the sugar and scraped vanilla bean and toss.
Place into the oven and roast until bubbly, 20-25 minutes.
Serve with vanilla ice cream!
