ingredients

  • 1 pound red seedless grapes
  • 2 tablespoon balsamic vinegar
  • 1/4 cup olive oil, plus more for brushing
  • 3 stalks rosemary sprigs, stalk removed and roughly chopped
  • 1 cup fresh ricotta
  • 1/4 cup honey
  • 1 tablespoon lemon zest
  • fresh baguette, sliced
  • sea salt, as needed

Method

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

    Add grapes, balsamic, olive oil and rosemary into a baking dish and season with a little salt. Roast grapes for 20-25 minutes, until they start to blister.

  • Step 3

    Brush both sides of the slices with oil, place on a baking tray and pop into the oven for 8-10 minutes or until brown.

  • Step 4

    In a small bowl, combine the honey and ricotta.

  • Step 5

    To assemble the crostini, spread a teaspoon of ricotta onto each toast and spoon the warm grapes on top. Sprinkle the crostini with salt and garnish with chopped rosemary and lemon zest. Enjoy!
