Roasted Cherry Tomato with Garlic and Thyme

"This is delicious, simple & so so tasty. Perfect for a cold winters night in and the best past it's ready in 30 mins. You can also use it as a pasta sauce.. just always remember to dip crunchy bread into the sauce... delicious!!!"

  • 4 packs whole cherry tomatoes
  • 1 bulb cut in half lengthways garlic
  • 3 cloves peeled and minced garlic
  • 1 can diced tomatoes
  • 1/2 cup olive oil
  • 1 teaspoon sea salt
  • handful of fresh thyme


  • Step 1

    Preheat the oven to 180ºC or 355ºF

  • Step 2

    In a large baking dish add the cherry tomatoes, tin tomatoes, minced garlic, thyme & olive oil. Season with salt & mix the ingredients well.

  • Step 3

    Place in oven & bake for 25-30 minutes or until tomatoes start to blister.

  • Step 4

    Serve with crunchy bread!
