ingredients

  • 4 ounces dried mango
  • 5 ounces raw cashews
  • 1 1/2 ounces desiccated coconut, (unsweetened finely shredded) and extra for rolling
  • 1/2 teaspoon tumeric
  • zest of a lime
  • Honey, or maple syrup (optional)

Method

  • Step 1

    Soak the cashews in hot water and the mango in room temperature water for 30 minutes. Drain and rinse.

  • Step 2

    Add all the ingredients to a food processor and mix untill it formes a dough. I like to leave small pieces of mango and cashew for the texture.

  • Step 3

    Roll into balls and coat with cocnut. Store in an airtight container in the fridge for a week. Enjoy!!
