ingredients
- 4 ounces dried mango
- 5 ounces raw cashews
- 1 1/2 ounces desiccated coconut, (unsweetened finely shredded) and extra for rolling
- 1/2 teaspoon tumeric
- zest of a lime
- Honey, or maple syrup (optional)
Method
Step 1
Soak the cashews in hot water and the mango in room temperature water for 30 minutes. Drain and rinse.
Step 2
Add all the ingredients to a food processor and mix untill it formes a dough. I like to leave small pieces of mango and cashew for the texture.
Step 3
Roll into balls and coat with cocnut. Store in an airtight container in the fridge for a week. Enjoy!!
