Cauliflower Gnocchi with Sausage and Spinach

This easy weeknight pasta dinner is the perfect thing if you have 30 minutes or less! It uses cauliflower gnocchi as a great gluten free substitute for traditional gnocchi. If you've never tried it, now's the time!

ingredients
- 2 tablespoons olive oil
- 2 links hot Italian sausage
- 1 (12-ounce) bag cauliflower gnocchi
- 1 tablespoon ghee or butter
- 1/2 cup marinara sauce
- handful of spinach
- 1/2 bunch fresh basil, roughly chopped
- Kosher salt, to taste
- Parmesan cheese, shredded, for garnish
Method
Step 1
Heat olive oil over medium high heat in a large non-stick skillet. Add the sausage links and cook until cooked through and golden brown, about 4 minutes a side. Transfer to a cutting board.
Step 2
Add the frozen gnocchi to the same skillet and spread so that it is in a single layer. Let the gnocchi sauté, undisturbed, until golden brown on the bottom, 2-3 minutes. Flip using a large spatula and add 1-2 tablespoons of water. Continue to sauté, shaking the skillet every minute or so, until golden brown all over.
Step 3
Cut up the cooked sausage into bite sized pieces and add back into the skillet with the gnocchi. Add the butter and marinara and shake the skillet to combine. Add the spinach and basil and toss until the spinach is just wilted, 2-3 minutes.
Step 4
Sprinkle top with parmesan cheese and let it cook, bubbling, until the cheese is nice and melted, about 3 more minutes. Serve and enjoy!
