Spiralized Potato Shakshuka Nests

Serves 2
2 potatoes, spiralized
Olive Oil, as needed
salt and freshly ground black pepper
shakshuka sauce, as needed
2 eggs
Toss the potato in olive oil + a little sea salt and arrange in mini tart pans and bake at 425F for about 15 minutes or until very lightly browned edges.
Add a dollop of shakshuka sauce in the nests and add a small egg, then bake until the eggs were set.
