This open faced taco is filled with shaved brussels sprouts, avocado, green salsa, and topped with a fried egg. A healthy breakfast that comes together with just a few fresh ingredients!

ingredients
- 4 tortillas
- 1/4 cup white beans
- 1/4 teaspoon cumin
- Salt
- 2 avocados, sliced `
- 1-2 teaspoons olive oil
- 4 eggs
- 1/4 cup green salsa
- Arugula, or sprouts, for topping
Method
Step 1
Heat the tortillas in a dry skillet over medium heat for about 30 seconds per side. Set aside and keep warm. In the same skillet, heat beans, seasoning with cumin and salt, tossing to combine. Set aside.
Step 2
Wipe out skillet and add olive oil and add eggs. Cook to desired doneness.
Step 3
Place warmed tortillas on a plate. Add beans and green salsa. Top with fried egg. Add arugula and/or sprouts and any other desired toppings.
