"I’m on a boat and... it’s going fast and... I’ve got a nautical themed pashmina Afghan. Today has been quite a doozy (this altitude is no joke!) but I’m pushing through like a trooper. I hope I will become a super human when I get back to sea level (we’re almost at 14,000 ft). We’ve been in Peru almost a week and to be honest I had no idea what day it was. That is, until, I saw the plethora of toast posts this morning!
This combo has been one of my favorites lately. I piled toast high with the vegan ricotta, balsamic marinated strawberries, and tomatoes. Seriously a breakfast to remember! Do you have a crazy toast combo?

ingredients
- 2 slices sesame toast
- 3 tablespoons almond ricotta
- 2 tablespoons balsamic marinated strawberries
- 5 halved cherry tomatoes
- 2 Chopped basil leaves
Method
Step 1
Heat the bread slices in a toaster until toasted.
Step 2
Spread ricotta over each slice of toast.
Step 3
Top with strawberries, cherry tomatoes and basil.
