Honey Simple Syrup

ingredients

  • 1 cup granulated sugar
  • 3/4 cup water
  • 1/2 cup honey
  • 1/2 teaspoon ground cardamom
  • 2 teaspoons vanilla extract

For the Nut Filling

  • 4 1/2 cup walnuts
  • 2 teaspoons ground cardamom

For the Phyllo Layers

  • 1 (16 ounce) package phyllo dough, thawed
  • 1 cup melted butter
  • 1/2 cup Nutella®, for topping

To make the simple syrup:

Method

  • Step 1

    In a medium saucepan, combine sugar and water. Bring to a boil over medium-high heat, stirring until the sugar dissolves.

  • Step 2

    Stir in honey and vanilla extract, then lower the heat to medium-low. Let simmer for 10 minutes, stirring occasionally.

  • Step 3

    Remove from heat and allow the syrup to cool completely.

To make the nut filling:

  • Step 1

    In a food processor, pulse walnuts until finely chopped (about 15-20 pulses). Transfer to a bowl, add ground cardamom, and mix to coat the nuts evenly. Set aside.

To assemble and bake the baklava:

  • Step 1

    Preheat the oven to 325°F. Butter a 9x13-inch non-stick baking pan. If necessary, trim the phyllo dough sheets to fit the pan.

  • Step 2

    Layer 10 sheets of phyllo dough in the bottom of the pan, brushing each one with melted butter before adding the next.

  • Step 3

    Spread ¾ cup of the walnut filling evenly over the phyllo.

  • Step 4

    Add 4 more buttered phyllo sheets, then another ¾ cup of the nut filling.

  • Step 5

    Continue layering (4 buttered phyllo sheets + nut filling) until the filling is used up.

  • Step 6

    Finish with 10 buttered phyllo sheets on top.

  • Step 7

    Using a sharp knife, cut the baklava into diamond or square shapes. Bake for 1 hour and 10 minutes, or until the top is golden brown.

  • Step 8

    Remove the baklava from the oven and immediately pour the cooled honey syrup over the top. Let the baklava cool completely at room temperature, uncovered.

  • Step 9

    Once cooled, drizzle with Nutella hazelnut spread before serving.
