Guess what? I’m here to tell you that you can have your hearty, satisfying foods and your health (and pancakes) too! THEY ARE NOT MUTUALLY EXCLUSIVE. I mean, LOOK at that picture!

ingredients
- 1 cup gluten free flour blend
- 1 scoop vanilla protein powder
- 4 teaspoon baking powder
- 1 cup flax milk
- 1 large egg
- Juice of 1/2 a lemon
- 1/2 cup fresh blueberries
Method
Step 1
Pour the flour, baking powder, flax milk, egg, and lemon juice in a bowl until mixture comes together. Add in blueberries and lightly mix.
Step 2
On a buttered skillet, pour 1/4 cup of batter in a small circle for each pancake. Let them cook on medium-low heat for 3-5 minutes until golden, then flip on the other side for another 3-5 minutes.
Step 3
Serve warm with maple syrup!
