ingredients
- 2 package Alexia Food’s Roasted and Ready Baby Golden Potatoes with Himalayan Sea Salt
- 8 slice of bacon
- 1 1/2 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Method
Step 1
Preheat oven to 425F degrees. Prepare a casserole dish by sparing it with cooking spray.
Step 2
Slice bacon slices into small pieces. Cook on medium heat for about 10 minutes until crispy. Remove from heat onto a plate covered with paper towel to drain grease.
Step 3
Spread potatoes in the casserole dish so they are in one even layer. Bake for 11 minutes. Remove from oven and let them cool for a minute or two. Cut potatoes into quarters and place back in casserole dish.
Step 4
Spread your shredded cheddar cheese over potatoes. Bake another 11-13 minutes. Remove from oven. While potatoes are baking, chop green onions.
Step 5
Spread cooked bacon pieces on top of cheese. Add dollops of sour cream evenly on casserole. Finish by spreading chopped green onions. Serve immediately.
