  • 2 cups cold water (or dairy-free milk)
  • 2/3 cup chia seeds
  • 1/2 cup cocoa powder
  • 1/3 cup pure maple syrup (or raw honey)
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon Himalayan pink salt

Method

  • Step 1

    In a high-speed blender, add all the ingredients: cold water (or dairy-free milk), chia seeds, cocoa powder, maple syrup (or honey), vanilla extract, and Himalayan pink salt. Blend until smooth and creamy, scraping down the sides of the blender as needed.

  • Step 2

    Pour the blended chia seed pudding into a bowl or container. Cover and refrigerate for several hours, or ideally overnight, to allow the pudding to thicken and the chia seeds to expand.

  • Step 3

    Once chilled and thickened, give the pudding a good stir. Serve in individual bowls and enjoy! Leftovers can be stored in the refrigerator for up to 5 days.
