ingredients

  • 3/4 cup gluten free all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1/3 cup granulated sugar
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 7 tablespoons melted salted butter
  • 1/2 cup sprinkles

Method

  • Step 1

    In a small bowl, combine flour and baking powder. In a separate bowl, mix eggs, sugar, honey, vanilla and almond extracts. Add the wet ingredients to the dry mix and stir until combined. Gently, but quickly, mix in the melted butter until well incorporated. Cover the bowl with plastic wrap and chill for 1 hour.

  • Step 2

    Preheat oven to 400°F. Lightly grease the wells of a madeleine pan. Remove the batter from the fridge and fold in the sprinkles. Transfer the batter to a piping bag or use a small cookie scoop to fill each well 2/3 full.

  • Step 3

    Bake for 8-10 minutes, until the centers are puffed and the edges are lightly golden. Let cool slightly before gently turning out onto a wire wrack to cool completely.
