"Chocolate & Honey Toffe Cupcakes with White Chocolate Cream Frosting. Perfect for birthdays, picnics or whenever you fancy a sweet treat, they're sure to be a crowd-pleaser. Ingredients : All purpose flour - 95g Dutch process cocoa powder - 45g Granulated sugar - 100g Packed light brown sugar - 100g Vegetable oil - 80ml Vanilla extract - 2tsp Buttermilk room temperature - 120ml Baking powder - 3/4tsp Baking soda - 1/2tsp Salt - 1/4tsp Eggs room temperature - 2large For Toffe sauce : Honey - 20g Golden syrup - 20g Butter unsalted - 20g Brown sugar - 20g Sea salt - a small pinch For white chocolate cream frosting Creamcheese full fat room temperature - 227g Unsalted butter room temperature - 57g Powder sugar - 418g White chocolate melted - 100g Vanilla extract - 1tsp Method: Prepare toffee sauce: In a thick bottom saucepan add all the ingredients, whisk together and cook on low heat for 5 minutes & keep aside. Let it cool to room temperature For chocolate frosting: In a stand mixer with paddle attachment or by hand with a whisker, beat cream cheese & butter on medium speed for few seconds or until creamy . Add cooled melted chocolate until smooth & incoperated. Now on low speed gradually add powder sugar, few tablespoons at a time & beat until incorporated. Add vanilla and increase the speed to high & beat it smooth & creamy . Refrigerate for 2 hours. For cupcake : Preheat the oven at 350F/177°C. Sift the flour, cocoa, baking powder, baking soda & salt together in large bowl. Whisk it till combined. Set aside. In a another bowl, whisk the eggs, sugar, brown sugar, oil, and vanilla together until combined. Pour half of the wet ingredients into the dry ingredients. Then half of the buttermilk. Gently whisk for a few seconds. Repeat with the remaining wet ingredients and buttermilk. Stir until combined. Do not over mix. Pour the batter into the cupcakes liner. Fill only half. Bake for 17 minutes or until toothpick inserted in the center comes clean. Cool it to room temperature. To assemble use a small pairing knife to cut a diameter cone-shaped piece from center & fill it with toffee sauce. Add frosting on top with help of piping bag & enjoy."
