"Palak Patta Chaat (Crispy Fried Baby Spinach) with tangy & sweet chutneys (sauces), but here I combine this Chaat with some salsa to take this Chaat next level. Serve it as a snack or as starter. This recipe is a tasty, spicy & tangy way to indulge spinach in your day to day meals. Ingredients For spinach fritters : Spinach Leaves whole - 12-15 Gram flour - 1/2c Rice flour - 1tbsp Turmeric - 1/4tsp Red Chilli powder - 1/4tsp Mango powder - a pinch Cumin powder - 1/4tsp Water - 120ml Salt to taste Oil for frying For chaat Yougurt whisked - 1/2c Tamarind chutney - 2tbsp Green Chutney - 1tsp Chaat Masala - 1/2tsp Promegranate - 2tbsp For salsa : Onion finely chopped - 1 small Tomatoes finely chopped - 1/2 Jalapeno - 1/2 Garlic minced - 1 clove Cilantro - 1tbsp Lime juice as needed Salt to taste Method : Wash the spinach leaves & dry them on towel completely. In a bowl mix all thd dry ingredients Gram flour, turmeric, red chilli powder, mango powder & salt, add rice flour & mix it well. Start adding water little at a time and start mixing with a whisker and make batter like consistency. Once it's nice & smooth keep aside. Meanwhile prepare salsa, mix all the ingredients onion, tomatoes, jalapeno, lime,cilantro garlic & salt. Keep it aside. Heat oil in a deep wok or pan around 180°C/356F, Dip each spinach leaf in batter and start frying them, don't add to much spinach at once, 3 - 4 at a time. Once it's light golden drain them on kitchen towel. Start assembling of chaat. In a serving plate, place the fried spinach fritter, add yougurt, mint & Tamarind chutney. Now add salsa, garnish it with some chaat masala & promegranate seeds. Serve immediately & enjoy."
