Yield: Serves or Makes 4-5
Heat oil in a skillet over medium heat. Sauté the onion and garlic for a few minutes until fragrant, then stir in lentils and spices. Add the vegetable stock, tomatoes and tomato purée and let simmer on low heat with lid half on, until lentils are cooked, about 15-20 minutes.
Add chickpeas and remove from heat. Serve with a few sprigs of fresh coriander on top.
