ingredients

  • 1/2 cup uncooked white quinoa
  • 1 1/2 cups coconut water, divided
  • 1 cup coconut milk
  • 1 cup frozen raspberries
  • 1 frozen banana
  • 1 teaspoon orange blossom water, optional

Method

  • Step 1

    Combine the quinoa and 1 cup coconut water in a pot. Cook according to package directions, then let cool completely.

  • Step 2

    Put 1/4 cup of the cooked and cooled quinoa in a blender with the remaining ingredients. Blend until smooth and creamy. Pour into a bowl and add desired toppings.
