For the Chia Pudding
- 2 cups coconut milk
- 1 tablespoon coconut cream
- Maple syrup, To Taste
- 1/ 2 cup chia seeds
- 1/ 2 frozen mango
- 1 1/ 2 cups papaya, fresh chopped, plus more for garnish
- Lime, sliced for garnish
Place coconut milk, cream and maple syrup into a bowl and whisk together well. Pour the chia seeds in and whisk for a minute or so, leave for a few minutes and whisk again. Let sit for about 1 hour or overnight.
Place mango and papaya into a food processor and combine until smooth and creamy.
Layer cups with chia pudding and fruit puree. Serve with a few chunks of papaya on top and a wedge of lime.
