ingredients

  • 1 1/3 cups roasted almonds
  • 2/3 cup raw pistachios
  • 1/2 cup puffed rice
  • 1/3 cup pepitas
  • 1/3 cup coconut flakes
  • 1/3 cup dried cranberries
  • 1/4 cup dried goji berries
  • 3 tablespoons currants
  • 2 tablespoons hemp seeds
  • 1/2 teaspoon cinnamon
  • 1/2 cup rice malt syrup
  • 1/4 cup tahini
  • 3 tablespoons coconut sugar
  • 2 tablespoons coconut oil
  • 2 teaspoons vanilla extract

Method

  • Step 1

    Line a rectangular baking pan, about 10x7 inches, with parchment paper.

  • Step 2

    Combine all the nuts, seeds, fruit, and cinnamon in a large mixing bowl. Combine the remaining ingredients in a small saucepan over low flame. Whisk until smooth, cooking until it comes to a boil, then remove from heat. Pour over dry ingredients and mix well to combine.

  • Step 3

    Transfer mixture to prepared pan and press down firmly. Refrigerate for about 1 hour.

  • Step 4

    Remove from pan and slice into bars. Store in an airtight container in the fridge.
