Roasted Beets with Aborio Rice

  • 4 beets
  • 2 cups arborio rice
  • 4 cups vegetable broth
  • Oil
  • 1 clove garlic, minced
  • 3 tablespoons diced onion


  • Step 1

    Preheat oven to 400ºF. Wrap each beet in foil. Roast for 1 hour, until soft enough to pierce with a fork. Let cool until able to handle, then peel. Chop 2, and puree the other 2 in a blender. Set aside.

  • Step 2

    Meanwhile, combine rice and vegetable broth in a pot. Cook according to package directions.

  • Step 3

    Heat a little oil in a pan over medium. Sauté garlic and onion until fragrant, about 3 minutes. Remove from heat.

  • Step 4

    Mix together the rice, beets, and sautéed garlic and onions. Serve warm.
