ingredients
- 1 large butternut squash,peeled and diced
- 1/4 cup coconut oil, melted, plus more for preparing the pan
- 1 cup fresh cranberries
- 1 tablespoon Simply Organic Ground Cinnamon
- 1 teaspoon Simply Organic Ground Nutmeg
- 1 teaspoon Simply Organic Allspice
Method
Step 1
Preheat oven to 375˚F and grease a 9x9 inch baking pan with coconut oil.
Step 2
In a large bowl, toss together the butternut squash cubes, coconut oil, and spices. Add the cranberries and toss to combine.
Step 3
Pour butternut squash mixture into the pan and bake for 45 minutes, or until butternut squash begins to brown and is soft. Serve hot.
