Raw Key Lime Pies With Chocolate Almond Crust
"Oh my word!! New favourite dessert alert! KEY LIME PIE on a RAW CHOCOLATE & ALMOND CRUST Excuse me a moment while I float back down from dessert heaven. Since my soup is still defrosting which I took out ready for lunch I had NO CHOICE but to eat dessert first and oh myyyyyy! 100% delicious 100% healthy. An almond, oat, chocolate and date paste crust topped with avocado, coconut cream and lime juice. That's a combo worth creating don't you think?!"

Raw Key Lime Pies with Chocolate Almond Crust

Makes 3 mini tarts

For the crust:

1 cup oat flour

1 cup almond flour

2 tbsp date paste

1 tbsp raw cacao powder

1 tbsp melted coconut oil

Key Lime Filling:

1 avocado

1 tbsp coconut cream

1 tbsp sweetness - I used xylitol granulated

juice of 1 lime pluses zest and slices for decorating


Combine all base ingredients* and press in to your flan bases - either 3 small or 1 larger. Place in the freezer while you prepare the topping.

Place topping ingredients in a bowl and blitz with a hand blender. Spoon on top of the bases and smooth out with underside of spoon. Decorate using extra lime slices and zest.

*You could prepare the bases and leave in the freezer until you are ready to use.
