ingredients
- 1 cups Cashews
- 2 fresh Red sweet Bell peppers sliced into strips
- 1 large Onion sliced into thin wedges
- 1 pound boneless Chicken breast cubed
- 2 tablespoon Cornstarch
- 1 cup fresh Snap peas (optional)
- 1 teaspoon toasted Sesame seeds
- 6 tablespoons Sesame oil
- 5 sprigs chopped Green onions
- 1/2 cup Sesame ginger sauce
- 1/2 cup Soy sauce
- 1 tbsp Honey
- 2 teaspoon Chili paste
- To Taste Salt and pepper
Method
Step 1
Cut chicken into cubes, coat with cornstarch, salt and pepper.
Step 2
In a preheated wok or pan: add 1 Tbsp of sesame oil, toast cashews on low heat for 2 min. Set aside
Step 3
Raise heat to med/high add 1 Tbsp of oil, sauté vegetables for 3 minutes till charred, sprinkle sesame, set aside.
Step 4
Add 4 tbsp of remaining oil to pan, Brown chicken on all sides. Add honey to caramelize.
Step 5
Return veggies and cashews to pan. Toss with sauces and chili paste for 2-3 minutes. Garnish with green onions.
Step 6
Serve over jasmine steamed rice or Serve on its own for a lower carb option.
