ingredients

  • 1 cups Cashews
  • 2 fresh Red sweet Bell peppers sliced into strips
  • 1 large Onion sliced into thin wedges
  • 1 pound boneless Chicken breast cubed
  • 2 tablespoon Cornstarch
  • 1 cup fresh Snap peas (optional)
  • 1 teaspoon toasted Sesame seeds
  • 6 tablespoons Sesame oil
  • 5 sprigs chopped Green onions
  • 1/2 cup Sesame ginger sauce
  • 1/2 cup Soy sauce
  • 1 tbsp Honey
  • 2 teaspoon Chili paste
  • To Taste Salt and pepper

Method

  • Step 1

    Cut chicken into cubes, coat with cornstarch, salt and pepper.

  • Step 2

    In a preheated wok or pan: add 1 Tbsp of sesame oil, toast cashews on low heat for 2 min. Set aside

  • Step 3

    Raise heat to med/high add 1 Tbsp of oil, sauté vegetables for 3 minutes till charred, sprinkle sesame, set aside.

  • Step 4

    Add 4 tbsp of remaining oil to pan, Brown chicken on all sides. Add honey to caramelize.

  • Step 5

    Return veggies and cashews to pan. Toss with sauces and chili paste for 2-3 minutes. Garnish with green onions.

  • Step 6

    Serve over jasmine steamed rice or Serve on its own for a lower carb option.
