Method

  • Step 1

    In a soup pot or your slow cooker with a browning function, Add oil, Sauté onions. Reserve half of the onions on a paper towel for serving. add lentils and veggies, sauté, add diced tomatoes, sauté.

  • Step 2

    Add bone broth, chicken stock or water and cook till all veggies are tender and the lentils have dissolved. Season with cumin, salt and pepper. Blend to your desired consistency with a hand blender. Bring to a boil and simmer for 5 minutes.

  • Step 3

    For extra flavor, in a separate sauce pan, sauté 3 cloves of minced garlic in 1tbsp of oil or butter until golden brown, add a splash of white distilled vinegar. This is called “Ta’aleya” Ladle soup into bowls, top with Ta’aleya and reserved sautéed onions. Serve with pita chips for dipping! Enjoy ♥️

  • 3 stalks of chopped Celery
  • 2 chopped Carrots
  • 1 can (28 oz) diced Tomatoes
  • 810 cups Water, chicken stock or bone broth
  • 3 cloves minced Garlic
  • To Taste Salt, pepper & cumin
