Maine Blueberry Cupcakes

"Since we all can't travel to Maine right now, I'm going to bring a little piece of Maine to you with my friends @VisitMaine and @thefeedfeed! (#ad) Today, I spent the day baking with @wymansfruit frozen wild blueberries. Wyman’s of Maine has been proudly family owned in Maine since 1874 and have a variety of frozen fruits that are the perfect addition to smoothies, baking, cooking or just by themselves! Not only do wild blueberries have 2x the antioxidant activity as ordinary blueberries but frozen is actually fresher! By freezing the wild blueberries within 24 hours of harvesting allows the berries to maintain their ripeness and taste. Recipe Card

For the Cupcakes:

ingredients

  • 2 1/2 cups all-purpose flour
  • 2 cups sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup Wyman's Wild Blueberries

For the Cream Cheese Frosting:

ingredients

  • 2 (16 ounce) blocks cream cheese
  • 1 cup unsalted butter
  • 4 cups confectioner's sugar
  • 2 teaspoons vanilla extract

Method

  • Step 1

    Preheat oven to 350 degrees F. Prepare cupcake pan with liners or generously spray with non stick cooking spray.

  • Step 2

    Combine flour, sugar, baking powder and salt in a mixing bowl. Set aside. In a stand mixer add milk, vegetable oil, vanilla extract and eggs and mix to combine.

  • Step 3

    Add in the dry ingredients and mix until well combined. Scrape down sides of mixing bowl to make sure all ingredients are thoroughly mixed.

  • Step 4

    Add in 1 cup of frozen Wyman's Wild Blueberries (do not thaw). Fold into batter.

  • Step 5

    Fill cupcake liners about 1/2 way and bake for 15-17 minutes. If making larger cupcakes, add 7-10 minutes to bake time or a toothpick comes out clean.

  • Step 6

    When time is up remove cupcakes from oven and allow to cool for a couple of minutes on a wire rack and then remove fully from cupcake pan to fully cool.

  • Step 7

    Make frosting by combining softened butter and cream cheese in a stand mixer and beating till smooth.

  • Step 8

    Add in confectioner's sugar a little bit at a time and mix. Add vanilla extract and mix until smooth.

  • Step 9

    Pipe frosting onto cupcakes and top with additional Wyman's Wild Blueberries!
