For the quiche dough
ingredients
- 1 1/4 cup all-purpose flour
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1 stick cold unsalted butter, cut into small cubes
- 3 tablespoons ice cold water
- 1/2 cup Piave PDO, grated
For the filling
ingredients
- 1 bunch asparagus, thinly sliced
- 1 small zucchini, thinly sliced
- 1 handful of spinach or kale, chopped
- 1 handful of herbs (such as chives, cilantro, and thyme)
- 1/2 white onion, finely chopped
- 2 garlic cloves, minced
- 5 large eggs
- 1 1/2 cups heavy cream or half and half
- 1 cup Piave PDO, grated
- Kosher salt and pepper, to taste
For the dough
Method
Step 1
Combine the dry ingredients, including Piave PDO cheese into the bowl of a stand mixer fitted with the paddle attachment. Add butter and mix until the butter is broken up a bit, about 5 minutes.
Step 2
Add the water slowly and mix until the dough begins to pull together.
Step 3
Transfer dough to a floured surface and form into a disc. Wrap tightly in plastic and chill overnight or at least 30 minutes.
Step 4
Take the dough out of the fridge and let it sit at room temperature for 15 minutes.
Step 5
On a floured surface, roll out the disc to about a 12" diameter. Transfer to a buttered 9" round quiche pan.
Step 6
Press gently into the creases and cut off any excess. Place into the freezer for 30 minutes to firm up.
Step 7
Preheat the oven to 350°F. Place crust into the oven and bake for 20 minutes. Remove from oven and allow to cool completely before filling.
For the filling
Step 1
In a large mixing bowl combine eggs, heavy cream, chopped garlic, onions, and herbs. Season with salt and pepper.
Step 2
Place the spinach, zucchini, and half the Piave PDO cheese evenly over the bottom of the crust.
Step 3
Pour the egg mixture over top vegetables.
Step 4
Add the asparagus and top with the remainder of Piave PDO Cheese.
Step 5
Place back into the oven and bake for 45 minutes. Or until set. The center should be slightly jiggly.
Step 6
Remove from the oven and cool for 30 minutes before slicing.
Step 7
Serve quiche with a side salad dressed with olive oil, olive oil, and, a squeeze of lemon. Season with salt and pepper and top with shaved Piave PDO.
