For the sauce

ingredients

  • 1/4 cup neutral oil, heated to 250-275° F
  • 1 tablespoon fresh ginger, minced
  • 2 garlic cloves, minced
  • 1 scallion, minced
  • 1 red jalapeño pepper, minced
  • salt, to taste

For the chicken

ingredients

  • 4 skin-on chicken thighs, deboned
  • Kosher salt, to taste
  • 1 tablespoon fresh ginger, minced
  • 2 garlic cloves, minced
  • 1 scallion, minced
  • 1 cup jasmine rice, rinsed well
  • 1 cup EPIC Homestyle Savory Chicken Bone Broth

To make the sauce

Method

  • Step 1

    Combine ginger, garlic, scallion, and pepper into a heatproof bowl.

  • Step 2

    Gently pour over heated oil to bloom the aromatics.

  • Step 3

    Season with salt to taste. Set aside for serving.

To make the chicken

  • Step 1

    Trim off any excess skin or fat on chicken thighs and set aside.

  • Step 2

    Season chicken thighs with Kosher salt and massage into the skin, set aside.

  • Step 3

    To a clay or heavy bottom pot, cook the excess chicken skin until roughly 1 tablespoon of fat is rendered.

  • Step 4

    Add ginger, garlic, and scallions, sweat until fragrant.

  • Step 5

    Add jasmine rice and toast until fragrant.

  • Step 6

    Add EPIC Homestyle Savory Chicken Bone Broth. Place chicken directly over top of rice.

  • Step 7

    Cover and cook on low for 20 minutes.

  • Step 8

    Serve with ginger, garlic, scallion sauce on the side.
