ingredients

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup unsweetened almond milk
  • 3/4 cup plus 1 tablespoon granulated sugar, divided
  • 1/3 cup melted butter
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1/2 cup old-fashioned oat
  • 1 tablespoon canola oil

Method

  • Step 1

    Pre-heat your oven at 375°F. Butter or spray a muffin tin. Set aside.

  • Step 2

    In a big mixing bowl, mix the two flours, baking powder and salt. In a separate bowl, whisk the eggs, almond milk, 3/4 cup sugar, butter and vanilla. Add the wet ingredients to the dry. Mix well. Add the blueberries and mix again with a spatula. Divide the batter into the muffin tin, filling each 3/4 full.

  • Step 3

    In a bowl, mix old-fashioned oats with 1 tablespoon sugar and oil. Sprinkle on top of the muffins. Bake for 20-30 minutes, or until toothpick comes out clean.
