Tuna and Tomato Ziti with Basil

ingredients

  • 8 ounces dry ziti pasta
  • 15 ounces solid albacore tuna
  • 15 ounces diced tomatoes
  • 1 small onion
  • 2 cloves garlic
  • 1/4 cup basil, chopped
  • 2 tablespoons olive oil
  • 1/4 cup finely shredded mozzarella
  • Parmesan shavings
  • Fresh basil leaves
  • Salt and pepper, to taste

Method

  • Step 1

    Boil water in a large saucepan, add salt when the water is boiling. Cook the ziti according to the time indicated on the package. Don’t forget to reserve about a cup of pasta water (*you might not use it all but you may need more or less if the sauce dehydrates too much).

  • Step 2

    Dice the onion and mince the garlic. Heat a large saucepan, pour the olive oil and add anion and garlic. Sauté for 3 minutes or until the onion is translucent. Add the diced tomatoes and let it cook for 5 minutes, mixing occasionally. Finely, add tuna in pieces, chopped basil, salt and pepper. Cook for 5 minutes, add 1/4 cup of pasta water.

  • Step 3

    Drain pasta and place in the sauce pot. Add the shredded mozzarella and mix. Serve with some Parmesan shavings and fresh basil leave.
