Quinoa and Barley salad with quinoa and barley

  • 1/2 cup Barley
  • 1/2 cup red quinoa
  • 1 small bunch mint
  • 1/2 red onion
  • 12 cherry tomatoes
  • 1 lemon
  • 1/4 cup dried raisins
  • 4 tablespoons olive oil
  • salt and pepper


  • Step 1

    Cook the Barley and the quinoa in boiling water in a separate saucepan. Check the package to see how many times (it depends on the brands). When it’s cooked, drain and rinse.

  • Step 2

    Rinse the cherry tomatoes and cut them in half. Chop the mint and cut the onion in slices. Press the lemon to have the juice and mix it with olive oil in a small bowl.

  • Step 3

    In a big salad bowl, add the Barley, quinoa, chopped mint, red onion, tomatoes, dried raisins, pour the lemon dressing, salt and pepper, and mix. Serve!
