Mint and Pea Soup

  • 2 cups peas
  • 1 cup zucchini, sliced
  • 1 onion, chopped
  • 2 tablespoons ricotta cheese
  • 1 bunch mint
  • Salt, to taste
  • Pepper, to taste


  • Step 1

    In a large stock pot, combine peas, zucchini, onion and mint, and cover with water before bringing it to boil. Cover, and cook for 20 minutes. Season with salt and pepper to taste.

  • Step 2

    In the base of a blender, combine soup base, ricotta, salt and pepper and blend until smooth. Return to the stock pot and simmer 20 minutes.

  • Step 3

    Divide into bowls, garnish with olive oil and mint leaves and serve.
