ingredients

  • 1 2/3 cups coconut water
  • 4 tablespoons chia seeds
  • 2 tablespoons maple syrup
  • 2 teaspoons acai powder, or beetroot powder
  • 1 cup strawberries
  • 3/4 cup raspberries
  • Cacao nibs
  • Desiccated coconut

Method

  • Step 1

    For the basic chia pudding mix 2 tablespoons of chia seeds with 6 tablespoons of water. For the red chia pudding mix 2 tablespoons of chia seeds with 6 tablespoons of water and a teaspoon of acai or beetroot powder. You can also add maple syrup to make the chia pudding more sweet.

  • Step 2

    Mix the coconut water with the maple syrup.

  • Step 3

    For the smoothie on the right: Blend 1/4 of the coconut water with 1/3 cup strawberries for the lighter, top layer. Set this aside and now blend another 1/4 of the coconut water and 1/3 cup strawberries and add some acai or beetroot powder as well, to achieve a darker color.

  • Step 4

    Put together the jar: first fill in the darker smoothie. Put it into the freezer for around 1 hour. Next add the lighter smoothie and put into the freezer again. If you want to achieve this geometrical look, make sure the jar leans onto something in the freezer, so it will stay only on onside of the jar. After the two smoothie layers are frozen, add the basic chia pudding and some more strawberries and cacao nibs as a topping.

  • Step 5

    Now onto the jar on the left: Put 1/2 the remaining coconut water in the jar and let it freeze for about an hour. Next blend the remaining coconut water with 1/2 the raspberries and let it freeze again. When the smoothie is frozen add the red chia pudding, some fresh raspberries and desiccated coconut on top.
