ingredients

  • 4 bananas, 3 mashed, 1 thinly sliced lengthwise
  • 1 2/3 cups plus 2 tablespoons spelt flour
  • 1/3 cup walnuts
  • 3 tablespoons plus 1 teaspoon almond milk
  • 2 1/2 teaspoons baking powder
  • 2 tablespoons chia seeds, mixed with 5 tablespoons water
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/2 cup blueberries

Method

  • Step 1

    Preheat oven to 350ºF. Line a loaf pan and set aside.

  • Step 2

    Combine all ingredients except the blueberries in a mixing bowl. Pour batter into prepared pan and top with blueberries. Put sliced banana on top.

  • Step 3

    Bake for 45 minutes. Let cool slightly before slicing.
