ingredients
- 4 bananas, 3 mashed, 1 thinly sliced lengthwise
- 1 2/3 cups plus 2 tablespoons spelt flour
- 1/3 cup walnuts
- 3 tablespoons plus 1 teaspoon almond milk
- 2 1/2 teaspoons baking powder
- 2 tablespoons chia seeds, mixed with 5 tablespoons water
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- 1/2 cup blueberries
Method
Step 1
Preheat oven to 350ºF. Line a loaf pan and set aside.
Step 2
Combine all ingredients except the blueberries in a mixing bowl. Pour batter into prepared pan and top with blueberries. Put sliced banana on top.
Step 3
Bake for 45 minutes. Let cool slightly before slicing.
